I’ve always loved granola bars. As a kid they were the heroes of snack-time; and as an ‘adult’ they’re the perfect breakfast-on-the-go. So you can imagine my excitement when I discovered that they’re perfect for My Midnight Baking, too!
These cuties come together in absolutely no time. Simply combine all of the ingredients in one big bowl, press the mixture into the pan, and toss the whole thing in the oven. The recipe is fully adaptable too – I like mine with chocolate chips (#becausechocolate), but they’re great with dried cranberries and flaked almonds too. Or for a fun treat try using a little bag of trail mix (i.e. mixed nuts, dried fruit, chocolate pieces).
To really evoke memories of the chewy granola bars of my youth, I like to drizzle chocolate on top of the cooled bars. The simplest way to do this is to spoon some melted chocolate into a plastic baggie, snip one of the corners, and squeeze it like a piping bag. This makes it easy to control the drizzle.
Once sliced, these bars will stay fresh for up to two weeks – enjoy!!
Ingredients:
- 3 cups quick cook oats
- 1 can (14oz) sweetened condensed milk
- 2 Tbsps butter, melted
- 1 ½ cup sweetened flaked coconut
- 1 ½ cups chocolate chips
- Extra chocolate for drizzling (approx. ½ cup)
Process:
- Preheat oven to 350°F, grease 9” x 13” baking pan
- Stir dry ingredients together in a large mixing bowl
- Add sweetened condensed milk and melted butter, stir until evenly combined
- Press mixture into prepared pan
- Bake 20-25 minutes, until edges are lightly browned
- Let stand for 5 minutes, then cut into bars and cool
- Optional: Melt extra chocolate in a double boiler and drizzle over cooled bars
